Warm Grain Salad with Pecans and Persimmons
- 1 1/2 cups spelt, wheat berries, or other whole grain
- 3 Tbsp. apple cider vinegar
- 1/4 c. olive oil
- 1 small shallot, finely diced
- 1/2 c. toasted pecans
- 1 oriental persimmon, diced
- 3 oz. crumbled Feta cheese
- Salt and pepper
Cook the grains according to package directions. While they cook, chop the shallot, toast the pecans, and dice the persimmon.
Whisk the shallot and vinegar together. While whisking, slowly add the olive oil in a slow, steady stream. Add salt and pepper to taste.
Drain the grains, then immediately add all other ingredients to a serving bowl and toss to combine. Pour the shallot, oil and vinegar mixture over the top and stir. Serve immediately. This makes 6 servings.
